Sadly strawberries are not always what they are hyped up to be and fail to deliver that quintessential English summer dose. Faced with below pa strawberries the other day that I wanted to jam I gently engaged the creaking brain. Earlier I had been taking cuttings from my rose scented geranium and I decided to enhance the strawberry jam flavour with them. I macerated the strawberries with the sugar and 18 leaves overnight. Then removed the leaves before jaming the strawberries. To increase the rosey flavour I returned the leaves to the jam when it was cooled to tepid. Then removed again before potting up.
A bit of a palaver, nah, worth it for a divinely decadent summer hit the jam will deliver in the dreary winter months.
